This study used nose-space analysis (SIFT-MS) to examine the influence of biological factors (age, BMI, oral microbiota) and behavioral factors (food neophobia) on flavor release. Age and BMI were anticorrelated with release, whilst neophilics exhibited contrasting behavior likely due to reduced anxiety-related responses. Intriguing correlations with the oral microbiota were observed.
